This stamp issue focuses on four of Australia's iconic dishes. Although each has a fascinating social history, much of this culinary history is steeped in myth, including when and where the dishes were created. These classic dishes remain as popular today as they were when first placed on Australian tables. The desserts featured are the Pavlova, which was created based on inspiration from The Dying Swan, a solo dance by Russian prima ballerina Anna Pavlova; the Peach Melba, created in honour of Australia's first world-renowned opera singer, Dame Nellie Melba; the Lamingtons, which was probably named after Charles Cochrane-Baillie, 2nd Baron Lamington (governor of Queensland from 1896 to 1901) or after his wife, Lady Lamington; as well as the Anzac Biscuits, named after the ANZAC soldiers who fought alongside each other at Gallipoli in 1915.
